There is a thread at kuro5hin about how to make your own sushi. I'd probably start with California rolls or the like. I'm not sure if I feel comfortable eating raw fish prepared by an amateur — even myself.

I did the california roll deal. It's very easy and they make a great/healthy snack.

Theres nothing special the chef has to do to make it safe to eat..You buy decent raw fish and eat it. It wont kill you as long as you follow normal hygine rules. eg/ dont make sushi in your bathroom

Yeah, what I meant is that the chef has a better sense of when the color, smell, feel, etc. isn't quite right. Whereas, I'd only know if the fish was clearly rotten, not the borderline cases.
